Last year I made this mixed berry pie recipe for Father’s Day and also for the 4th of July weekend. It was a huge hit with the family and they asked for it on basically every special occasion that followed.
I wanted to switch it up a bit and just go with a simple blueberry pie recipe. For some reason it just seems perfect for summer. Blueberries are probably my favorite of the berry family, so I definitely wanted to post this simple and delicious recipe that is sure to be a hit for any occasion if nothing else than a Tuesday night.
Also, be warned, if you add whipped cream on top, you’ll be addicted. So, top at your own risk.
You can write down the ingredients and directions on these printable recipe cards.
2-3 pints of blueberries
Dash of nutmeg
2 Pie Crusts
1 Stick of Butter
(optional) 2 tablespoons of flour
Preheat oven to 400.
In a bowl, lightly coat the blueberries in sugar. Toss in a dash of nutmeg. Add the optional flour (to reduce the amount of juice in the pie, but if you like a juicy pie, feel free to leave it out)
In a pie dish, lay your first piece of pie crust down, add blueberry mixture, then top with patts of butter. Cover with a second pie crust. You can add the whole crust, pinch edges and cut a slit in the center to allow steam or you can create a lattice top. If you’re not sure how to create a lattice crust, I did a blog post on how to create one here.
Bake 35-40 minutes and enjoy!
